Antioxidant powerhouse
Yep, I’d say this recipe is basically an antioxidant powerhouse. Read more about benefits of good, quality coffee here.

This recipe calls for pecans and dates, which are a great source of antioxidants.
Dates are beneficial for fiber, too. They’re also a great ingredient to use as a natural sweetener if you’re looking to get away from refined sugar.
Cocoa powder continues the antioxidant theme. However, it’s important to note that with cocoa powder, not all are created equal with their health benefits. When cocoa is processed with an alkaline, it decreases the antioxidant content. Heating also reduces it’s content. That’s why I love this recipe. Uses cocoa powder as is to preserve as much antioxidant benefit as possible.
Coconut oil is a bit controversial. Yes, it’s plant based and is an alternative to dairy if you are looking for a fat. However, some of the information gets a bit skewed here. It’s touted as a superfood by some, because of the MCT (medium chain triglycerides). But, the MCT accounts for less than 20% of the fat found in coconut. The remaining 80+% is long chain triglycerides, which have been linked to heart disease. So, like everything. It’s important to weigh the benefits and risks for you personally when deciding.

Ultimate Energy Bites with Coffee
Equipment
- Food Processor
Ingredients
- 1 1/2 Cups Pecans, raw
- 4 Medjool dates, pitted
- 1 Tsp Purity Coffee, ground
- 1 Tsp Cocoa Powder
- 2 Tbsp Coconut Oil, unsweetened
- 1 Tsp Vanilla Extract
- Salt (to taste)
Instructions
- Add pecans to food processor and pulse until finely ground.
- Add remaining ingredients and process until combined.
- Roll into 12 bites.
- Refrigerate until firm. Then dust with cocoa powder if desired.
